Peter Flaxman - Accounting Solutions  

Peter provides our Accounting Solutions. He is a chartered accountant with a catering degree and 25 years experience in operations and finance in the hospitality industry, from start-ups to quoted companies.

Peter has extensive experience at Finance Director level in various companies such as Imperial Inns & Taverns, SFI, Harvester Restaurants and Coffee Republic. In addition to this Peter was Managing Director of Crown Management Systems a company that provides systems to Caterers. Two years ago Peter set up his own practice working specifically with small ambitious entrepreneurial companies.

Peter’s experience and accounting expertise means that he can offer not only a complete outsourced accounting function but also added value in terms of real commercial expertise based on a significant knowledge of the catering industry. Example services are:

  • Specialised weekly returns system
  • Checking site submissions and all accounting and payroll processing
  • Production of weekly results and full monthly management accounts
  • Compliance with all Revenue and Customs requirements
  • Company secretarial and production of annual reports

Outside of work Peter is a keen golfer, likes food and has 5 kids!!

Sue Newton - Employment Solutions  

Sue runs our People Solutions. She has a catering degree and 30 years experience in hospitality and retail operations and HR with venture capital backed and quoted companies.

Sue has worked at HR Director level in Harvester Restaurants, Asda / Wal-Mart as well as VC backed Mill House Inns. In addition she has run her own restaurant business and currently runs her own outsourced HR business.

Sue provides services across the whole spectrum of HR including legal, recruitment, training, performance management, communication, teambuilding and coaching. In fact
anything involving people!

Outside of work Sue enjoys cricket (supports Kent CCC), basketball, jogging and reading.

Ruth Macadam - Training Solutions  

Ruth runs our Training Solutions. She has a catering degree and over 20 years experience in hospitality and retail operations and HR with venture capital backed and quoted companies.

Ruth provides outsourced training support through her own company to a range of clients that currently include BHS, Aramark, Rolls Royce, Mill House Inns & Protocol.

Ruth has worked in training for Harvester restaurants, Asda / Wal-Mart & Mill House and so has excellent knowledge of the catering and retail industry. In addition following a secondment to Wal-Mart in the United States Ruth is one of the leading experts in e-learning in the country.

In her spare time Ruth likes to ski or sail as well as read. In addition, she is currently studying for her MSc in Organisation Consultancy.

Ann Elliott - Marketing Solutions  

Ann provides our Marketing Solutions. She is one of the most experienced marketers in the sector today with a wealth of experience across both pubs and restaurants.
                       
Ann was Marketing Director of both Pizza Hut (UK) Ltd and Beefeater during a 20 year career with Whitbread. Her marketing credentials were supplemented by extensive operational experience when she worked for Whitbread Pub Partnerships firstly as Business Development Manager and then as a Regional Director for 280 leased and tenanted pubs.

In 2001 Ann established her own marketing and sales company, working with Operations Directors and Managing Directors of Leisure and Hospitality businesses to help them to increase sales and profit.

Ann’s clients include Greene King, London and Edinburgh, JW Lees, Eldridge Pope, Hook Norton, Charles Wells, Wizard Inns, Laurel and Yates. She writes for the Morning Advertiser, The Caterer and Chain Leader, has been a judge at the Cateys and regularly speaks at Industry Conferences.

Ann loves to work with businesses to help them become more profitable than they thought they could be.

Graham Wood - Design Solutions  

Graham is our Partner for Design Solutions. He specialises in Hospitality Industry refurbishment and has over 20 years experience in this field.

Offering a Full Design and Project Management Service, including Architecture, Interior Design, and Cost Management, he also has considerable knowledge in both Residential and Commercial developments. A number of Clients request services to obtain Planning Consent on potential ‘Alternative Use’ sites within their existing Property Portfolio.

Graham firmly believes in a flexible, realistic yet holistic approach to design. His priority is to design and create the most appropriate Scheme in line with the Client’s objectives whilst incorporating innovative and imaginative ideas. The Completed Project will culminate in a ‘designed’ space’, which creates an ambient yet workable environment for Client, Operator, Customers and Staff.

His Client list includes Enterprise Inns plc, Whitbread PLC, Harvey & Son (Lewes) Ltd, The Bar Group, Sarumdale Ltd and other single and multiple unit Operators.

Graham has held a number of management positions within the Property and Retailing Industries. He has proven design development skills and a broad knowledge of acquisitions and estate management at Grand Metropolitan, where he worked closely with brands such as Burger King, Perfect Pizza, Häagen Dazs and Chef & Brewer.

Outside of work, Graham’s interests include a diverse love of music, good food and Spain.

Shelagh Slade - Music Licensing and Monitoring Service  

Shelagh Slade has over 20 years experience in music licensing and runs MLMS.
                       
Established in 1979, MLMS specialises in administering music licence applications on behalf of a variety of companies in sectors such as public houses, bars, hotels and restaurants.

MLMS client list includes Mitchells & Butlers, Regent Inns, Laurel, Yates, Punch and Whitbread Plc to name just a few.

A member of the Music Users Council, MLMS has a unique understanding of the complexities of music licensing. MLMS have strong working relationships with the licensing authorities and deal directly with them on behalf of their clients.

MLMS Service Includes:

  • Monitoring and costing of all entertainment activities and equipment
  • Collation of information required for PRS, PPL and VPL licences
  • Completion of all forms and documentation
  • Negotiating with licensing authorities to establish correct tariffs
  • Production of management information and reports to help companies control costs
  • Assisting clients with budgeting and cash flow forecasting.

Outside of work Shelagh enjoys golf, eating and drinking fine wine.

Miles Kirkwood - Hygiene and Safety Solutions  

Miles provides our Hygiene & Safety solutions including Health & Safety, Fire, Food Hygiene and Trading Standards.  Miles is a qualified Environmental Health Practitioner.  He has worked in Local Authority in a variety of roles for 12 years, before moving to the private sector to work for Allied Domecq Inns as a Health & Safety Manager.
                       
In 2000 Miles set up his own Hygiene and Safety consultancy to offer Environmental Health related advice to businesses, and soon after also added onto this, a range of products and equipment to support the consultancy.  Catering businesses now use Miles’ company to provide advice, training and consultancy, and the equipment needed to support good standards of hygiene and safety.

Miles offers a discount on any products or equipment purchased through his company to our members. 

Additionally, Miles is a registered Trainer with the Chartered Institute of Environmental Health, and provides accredited training courses in both Food Hygiene and Health & Safety at all levels, and anywhere within the UK.
